For one deer processing facility in Muskingum County..it’s been buck fever. Yesterday on opening day they skinned a record 3 hundred deer. Olde Village Meat in Frazeysburg had hunters lined up, to have their harvest turned into jerky, bologna, and steaks. The average deer yields an average 50 pounds of meat but it depends on how it’s killed. Venison has a high bacteria count, and needs to be cooked well. Hunters don’t always perform sanitary steps, when field dressing the deer. In this week, they will process an average of 10 tons of trail bologna.
