Health Department officials were out in full force Monday at the Muskingum County Fair.
Public Health Sanitarians were busy inspecting local food vendor stands making sure they abided by county health regulations.
Jason Tilton said the big concern is making sure food is cooked and stored at the proper temperature.
"There could be e-coli, salmonella, shigella, outbreaks, there’s several different food illnesses, that could happen in this environment," said Tilton.
Sanitary working areas are also important.
Tilton said hand washing is crucial element, as the fairgrounds can be a breeding ground for germs and bacteria.
"People volunteer here, so maybe they did have animals here at the fair so, when they come in the food booth, we want to make sure they wash their hands, that they wear gloves, they they follow proper cooling temperatures, to reduce the chance of of having a food-born illness outbreak," added Tilton
Tilton said Health Department officials will continue to check on vendors throughout the week.
