Students Prepare Mouth-Watering Dishes for Ethnic Food Fair
The kitchens at Zane State College are filled with a medley of smells, seeping from the Soul, Italian, Polish and Haitian cuisine being prepared for Friday’s 26th Annual Ethnic Food Fair.
Second year culinary arts students from Zane State are working under the supervision of Chef Marco Adornetto, to create four entrees, two side dishes and two desserts for the fair. Totaling five 5,060 portions of food.
According to Chef Adornetto this is a big undertaking, “this is 350 people, they have to really go outside the box. Think about, plan stuff, when to order, when to fire and cost control too.”
Chef Adronetto said that creating an executing menu for an event of this size with such diverse foods is a great learning experience for the students, even if things don’t go exactly as planned.
“We’ve tried things,” said Chef Adornetto, “and we’ll come in tomorrow when we are putting this all together and it may not work. So, we’ll have to scramble around. It’s going to be organized chaos in here tomorrow. I’ll have 25-30 students in here, putting everything together. So, it’s mass confusion, but, they do a great job.”
The Ethnic Food Fair is held annually to celebrate the legacy of Dr. Martin Luther King Jr. It starts at 11:00 A.M. on Friday, January 16th at Zane State College. Tickets are ten dollars.
